I had half a rutabaga leftover from the Root Slaw I made the other week and wasn't sure what to do with it! I've never really done much with rutabagas before, but a quick search showed that you could roasted them much like potatoes.
Cube the rutabaga; toss in a little oil, a little lemon, some Manchego and Roasted Garlic spice mix; throw it all together and roast at 425* for about 25-40 minutes (depending on how big your cubes are). Delicious!
